Clean Out the Fridge Cream of Veggie Soup

Kath is known for her soups and growing up a pot of something very similar to this could be found in our fridge at almost all times. Easy, delicious, and healthy this is the perfect lunch in the new year, just throw in a handful of crumbled extra toasty CheezIts!

Ingredients

  • Veggies

    • garlic, onions, shallots, carrots, celery, potatoes, cauliflower, broccoli, peas, asparagus, mushrooms

  • Chicken/Vegetable Bouillon Cubes/Concentrate

  • Spices

    • salt, pepper, garlic powder, onion powder, paprika, Old Bay, red pepper flakes

  • Dairy (aka the cream in cream of veggie)

    • milk, half & half, heavy cream, sour cream, plain greek yogurt, almond/nut milk

Cooking Instructions

  1. Begin by collectiong all your ingredients. I typically pull together all the veg in my fridge that I’ll need. Always garlic and onions - celery & carrots too- plus whatever else you have. I usually use brocolli/cauliflower and potatoes if I have them.

  2. Peel and wash all the veg. Chop everything into roughly the same size.

  3. Heat a tablespoon or two of olive oil in a large soup pot and add the onions and garlic. Once softened add the other veggies. Cover them with water and turn the heat to medium/medium high.

  4. Add a bouillon cube or two and all your spices to the pot and mix. Allow the soup to simmer and the veggies to soften. I usually add salt after blending the veggies as the bouillon can be salty but I also don’t like things very salty.

    if you ever add salt to my food I will not be offended or disappointed

  5. Once the veggies have softened it is time to break out the blender. I like using my immersion blender but you can use a normal blender too. Let the soup cool slightly if you’re using a normal blender, you may also need to do a couple passes through the blender. Blend until creamy and smooth.

  6. If you like your cream of veggie soup strain it through some cheesecloth. Now is time to add the dairy component. You can use any type of dairy you want the most important thing though is to add some hot soup to the dairy before adding it to the soup to help allow the dairy to mix evenly throughout the soup.

  7. Time to garnish and eat! Top with crunchy chips or cheese crackers, shredded cheese, a dollop of sour cream, or some green onions. This is the best soup on a cool day and is a great way to clear out the fridge and make something healthy.
